Introduction: Meat is an important food commonly consumed by humans. The quality of the meat is important to the buyer who purchases it, and is a particularly crucial level for industrial meat in this century. In many countries, as consumer demand for high-quality meat is rapidly increasing, the meat industry must produce an affordable quality of meat that provides safety, tenderness, health and flavor to ensure a greater increase in consumption of meat (Joo, 2013).Animal welfare is well-being, good health or luck, happiness and comfort. The experience of animal welfare is the best information on multiple aspects such as life extension, behavior, physiology, genetics and reproduction (Ewbank,1999). Previous slaughterhouse factors affecting meat quality: The last interval of systematic animal production is the transportation and slaughter of local animals from which the best quality meat is produced. Throughout the pre-slaughter period, however, different types of stress appear in local animals which are caused by humans, different environmental situations, travel, hunger and thirst. Furthermore, during the duration of housing, many factors can influence the recovery rate of the animals such as housing time, absence of hunger, water deprivation and ecological state. However, housing stress increases in farm animals due to dehydration of food and water deprivation. Some blood components are modified in the animal body during the housing period due to stress such as lactate dehydrogenase, glucose and phosphocreatine kinase (Ekiz,2012). Stress is a nonspecific emotion that occurs in external tests such as physiological and severe environmental physics.
