Gluten-Free Foods An estimated 3 million people in the United States are affected by celiac disease (CD). In individuals with CD, any food that contains gluten triggers the production of antibodies that attack and damage the lining of the small intestine; therefore, limiting nutrient absorption (US FDA, 2013). On August 2, 2013, the U.S. Food and Drug Administration (FDA) issued a final rule defining “gluten-free” for food labeling. “The FDA's new 'gluten-free' definition will help people with the condition make food choices with confidence and allow them to better manage their health,” said FDA Commissioner Margaret A. Hamburg, MD (Burgess, 2013 ). and the beliefs of restaurateurs is essential in the slow but constantly growing gluten-free sector (Glazer, 2013). Because this is a voluntary process, the manager must have a clear understanding of the needs of those with gluten-related disorders, gluten sensitivities, and individuals following a diet based on personal beliefs about gluten (National Gluten Awareness Foundation of Celiac Disease), 2014a).
